Fill a mixing glass with ice, then add:
- 60ml Good George Virgo NZ Olive Leaf Gin
- 20ml Vermouth
Stir gently, then strain into a frozen cocktail glass.
Twist a lemon peel over the top to release the oils, then discard.
Add a couple of drops of high-quality Aquiferra olive oil, then garnish with a skewer of Sicilian olives.
