Dark Chocolate Espresso Martini Cheesecake with a Fresh date Espresso martini syrup

Cheesecake:
225g Chocolate biscuits
1 Tbsp instant coffee
75g melted butter
500g cream cheese
250g sour cream
200g caster sugar
3 eggs, 2 egg yolks
100ml Good George dark chocolate espresso martini
1 tsp vanilla extract
3 Tbsp corn flour
Topping:
200g sour cream
2 Tbsp caster sugar
2 Tbsp Good George dark chocolate espresso martini
Date Syrup:
50ml strong coffee
50ml Good George dark chocolate espresso martini
2 Tbsp caster sugar
5 fresh dates, halved
Method:
Preheat the oven to 150 degrees fan bake. Grease and line a 20cm springform cake tin.
Blitz the biscuits and coffee in a food processor until it forms fine crumbs. Add the melted butter and mix to combine. Press the biscuit mix in the base and up the sides of the cake tin. Pop in the fridge while you make the filling.
In a food processor place the cream cheese, sour cream & sugar and whizz to combine. Add the eggs and yolks one at a time. In a seperate bowl combine the martini mix, vanilla & cornflour and mix to combine. With the motor running add the martini mixture, along with the melted chocolate.
Pour into the prepared cake tin and bake in the oven for 1 hour 10 minutes. Try not to open the oven while it bakes.
While it bakes, make the topping by combining the ingredients in a bowl and mixing well.
Take the cheesecake our of the oven after 1 hour 10 mins. It will still have a wobble to it but this is fine. Sit the cheesecake aside for 15 minutes to allow it to de puff and go flat. Pour the topping over evenly and return the cheesecake to the oven for another 12 minutes.
Turn the oven off and leave the cheesecake in there with the door slightly open for 1 hour, then pop it in the fridge for at least 4 hours, or overnight.
To make the syrup place the ingredients in a small pot and bring to boil for 6-8 minutes, or until it becomes syrupy.
Cool completely.
To serve, drizzle the syrup and the dates over the top of the cheesecake.
