The aroma opens with the bright, resinous scent of fresh Mānuka leaf and the peppery spice of Kawakawa, evoking a walk through the native bush after rainfall. A soft herbal sweetness from Chamomile and Rosehip follows, layered with subtle citrus from NZ Lemon Peel.

Sagittarius IPA Bush Sour
Read Recipe
  • 30 ml Sagittarius West Coast Kawakawa & Mānuka Leaf NZ Bush Gin
  • 60 ml Haymaker IPA
  • 25 ml Fresh lime juice
  • 15 ml Simple syrup (1:1 sugar + hot water)
  • A dash of bitters (optional, but adds depth)
  • Garnish: lemon twist

Method

  1. Shake the gin, lime juice, and simple syrup with ice.
  2. Strain into a chilled glass over fresh ice.
  3. Top with Haymaker IPA.
  4. Give it a gentle stir, not too much, just enough to make friends.
  5. Garnish with a lemon twist.
